Mmmm, I love fresh salsa, and this is my new favorite. I love anything with cilantro, and this salsa has plenty of it. Maybe I should call this “Cilantro Mango Tomatillo Salsa”? Nah.

This smoothie is made with Organic Chocolate flavored Nutiva HempShake, but you can also use carob or cocoa powder to make a somewhat similar drink. The hempshake powder adds raw plant protein (which is supposed to be easier to digest than protein from animal sources), omega-3 essential fatty acids, 9 essential amino acids, and a hefty amount of fiber. As a bonus, hemp is grown without pesticides and is a renewable source.

My mom is staying with us right now, which means I have a shopping and swimming partner, a helper in the kitchen, and a beautifully freckled hand and arm model. Thanks, Mom. I decided to experiment with making some non-dairy, fresh, healthy, and hopefully yum-o-licious ice cream, and it turned out quite tasty. But…I don’t remember how much of each ingredient I put in. I L.O.V.E. this smoothie. And no, I’m not a glutton for punishment. Nor do I love it only for its nutritional value, which is pretty high. I actually truly enjoy the taste of this smoothie. At first, I was afraid to make and drink something so green. I expected to have to pinch my nose and guzzle the whole thing as quickly as possible. When I finally got up the courage to try it, I was pleasantly surprised by its not-so-green flavor. When I have this for breakfast, my mornings seem to get along just a little better than usual.

Whenever I have a fresh pineapple around, I make at least one a day, but usually more. Because I have a pineapple right now, I’ll be drinking pineapple coconut smoothies practically around the clock.
