Wow, I have been lagging behind recently. I only gave you ONE recipe with cilantro after I highlighted it in my health and nutrition section! Well, here’s another one for ya. Who doesn’t like super tasty salad dressing that’s actually good for you? I’m sorry about the general terms for measuring ingredients. From now on, I vow to at least try to measure things, even when I’m just "messing around" in the kitchen with random ingredients. It would probably make this whole thing easier on us all. I am obsessively organized…except when I’m not. With me, if it’s not all put together, it all falls apart. This seems to apply to everything, even posting recipes and nutrition information. So, I’ve decided to highlight a different ingredient (herb, fruit, vegetable, nut, supplement, etc) each week, then share recipes that showcase that ingredient. Rather than sporadically post health and nutrition information and random recipes, there will be a method, a formula, a pattern! This makes my heart sing. I love love love to be organized. Smoothie of the Week: Chocolate Banana (and hemp!)

This smoothie is made with Organic Chocolate flavored Nutiva HempShake, but you can also use carob or cocoa powder to make a somewhat similar drink. The hempshake powder adds raw plant protein (which is supposed to be easier to digest than protein from animal sources), omega-3 essential fatty acids, 9 essential amino acids, and a hefty amount of fiber. On Tuesday, we took over some dinner to share with Dan and Aimee. I asked Aimee if she wanted us to dress as waiters and bussers with name tags, but she said Evan couldn’t read yet. So, we got out of that one pretty easily. After we ate our tacos and homemade coconut ice cream with fresh berries , I stole Aimee and Evan for some picture time. Really, how could I resist? You’ll probably notice that the pictures all look kind of different (black and white, sepia tones, more color, less color)…I think I was decision-challenged when I added the finishing touches to the pictures on my computer. Coconut Ice Cream with Berries

 

My mom is staying with us right now, which means I have a shopping and swimming partner, a helper in the kitchen, and a beautifully freckled hand and arm model. Thanks, Mom. I decided to experiment with making some non-dairy, fresh, healthy, and hopefully yum-o-licious ice cream, and it turned out quite tasty. But…I don’t remember how much of each ingredient I put in.
