This recipe adds a little twist to regular fruit salad: just to make things a bit more exciting. It’s also quick and easy, which always sounds good to me.
First, cut your favorite tropical fruits (or whatever you have on hand) into bite-sized pieces and mix them up in a bowl with shredded coconut.
The fruit I chose: pineapple, mango, strawberries, and apples
Make a double batch (use 2 coconuts) of the Vanilla pudding recipe on my site, and pour it on top of the fruit mixture.
Mix well! To be honest, I thought it started to look a little less appetizing when I added the vanilla sauce/pudding, but it sure tasted good.
Sprinkle more shredded coconut on top, and you’ve got a fancy shmancy fruit salad to take to that BBQ at your husband’s cousin’s new apartment…well at least I did.
